37 weeks

My doc ordered up an ultrasound for me to be taken at 37 weeks because she thought baby girl was measuring large. i was nervous all week waiting for this ultrasound - wondering how big she will be. and i know tons of people tell me their "estimates" are off by a pound plus or minus...but that's not so comforting knowing it could still be a pound PLUS!!!!! hahahaha

so the big estimate # at week 37 is..... EIGHT POUNDS FOUR OUNCES!!!!!!

are you kidding me? I about passed out on the table. I still have 3 weeks to go. I'm preparing mentally for a ten pounder.

but we got a cute little pic of her face, so it was all worth it. :) look at those lil lips and nose. (kinda hard to see because it's a pic of a print out-i have no idea how to use our home scanner.)

Baby shower by Jen & Kastell

My friends Jen Schumann and Kastell in my ward through me the cutest baby shower this week. I loved all the lavender details everywhere--from the candy bar, cake pops, plates/napkins, invitation to the little purple Pearce banner.

Ghetto circus

We spent the weekend in San Diego, and i found super duper discounted tickets online for "Circus Vargus" for Saturday night. I thought it would be fun to go to a Circus. But as soon as we got there, I started to realize it wasn't like a real circus. the extremely low-budget looking costumes were a dead giveaway. followed by the first and second acts. (hoola hooping, and trampoline jumping -- all things that normal people could do in their backyard.) right as we were about to bail and cut our losses, the ring master came to Jeremy (and a couple others around us) to get him to be involved in the next act/skit with the clown. I was dieing! because jeremy is really not the type of person to do anything like that AT.ALL.
all i have to say is good thing phones have cameras on them nowadays!! because otherwise this moment would have been short lived.

Then, Jeremy got to do his most favorite thing in the world--The Chicken Dance, while they set up for the next amazing backyard act.

this actually made it worth it, because i was thoroughly entertained by this. as soon as he got back to his seat, we were totally outa there.

jeremy did say that right before they went into "The Ring" - that the ring master told them, "Just have fun with this. It's all about creating memories for/with your family." so of course the whole weekend we kept saying to each other, "we're making memories". hahahaha

We ended the night by eating awesome Mexican Food in "Old Towne San Diego"- delicious home-made tortillas are the best! and watching some Winter Olympics.

be mine

In honor of Valentine's Day coming up, I thought I'd post a pic of me and my sweet valentine. :)

I was browsing through an old photo box this morning, and came across this picture of me and Jeremy back in the dating days. i can't get over how young we look. i love this picture of Jeremy. And I had to laugh thinking about this particular day.

Catalina Island, 2005

It was a big singles ward activity with about 200 people crammed on a ferry boat ride from Newport Beach to Catalina Island for a day trip. The boat ride was a little over an hour, and let's just say I get more sea-sick than car-sick. One of the boat crew gave me dramamine midway through the ride and pretty much knocked me out soon afterward. (I was so desperate for any meds that I didn't even realize it was NOT the non-drowsy type.) As soon as we got to the island I just wanted to fall asleep, and found the closest beach spot from the dock. There is another picture of me (burried/lost somewhere...pre-digital world) where I am curled up in a ball in that very spot on my beach towel. I literally slept almost the entire day there. It's a good thing Jeremy's buddies were there that day, because they took off to go snorkeling for the majority of the day while I was napping. Seriously, I think this picture was taken during only a 30 minute awake period during the day. I feel like I missed out on all the fun, and have wanted to go back since to actually see some of Catalina island since.

PIGS ARE FLYING!!

I never in my life would have thought this day would come--the Saints a) in the superbowl b) winning the superbowl... because i remember growing up in new orleans they were called the 'aints. rarely could even make it to a play-off game through a wild card. This entire season has been so fun to watch, and to see a city unite together. It's really amazing.

We pretty much knew the Saints won after this interception in the 4th quarter. GEAUX SAINTS!!!

Still in shock.

We had a good ole time at the Schumann's chowing down on Jeremy's famous Superbowl crab dip and Jen's home-made margherita pizza and breadsticks. Definitely a night to remember for a very long time.

Stuffing Chicken

So I'm surprised I've never posted this recipe before, since it is Jeremy's most favorite meal that his mom made growing up, and it has also become one of my faves too! And it's a great meal for when you have company over or need to bring a meal to someone. We usually serve it with Cashew-Rice Pilaf, which I've already posted the recipe to here.

4 boneless chicken breasts halves
4-6 slices of swiss cheese
1 can cream of chicken-mushroom soup
1/4 cup chicken stock
1 cup (or more!) of Stove Top stuffing mix
3-4 Tablespoons melted butter

1) Place chicken in 13x9" pan.
2) Top each breast with a slice of Swiss cheese.
3) Mix together the soup and chicken stock. Pour over chicken.
4) Then Sprinkle Stove Top stuffing Mix and drizzle with melted butter.
5) Bake, uncovered, for 50 minutes in a 350 degrees oven.

Served with Cashew-Rice Pilaf. And in a perfect world, I would have served with a veggie like grilled or steamed asparagus or something like that.

I'm guessing the reason I haven't posted this recipe yet, is because it's hard to get a pretty picture, because its very monochromatic. I debated whether to put up a picture, because it's not the best, but i hate recipes without pictures. so i'm putting it up anyways. :)
